Ingredients

  • 200g firm tofu (cubed)

  • 4 cups spinach leaves (palak), washed

Instructions

  1. Blanch spinach Boil water in a pot, add spinach for 2 minutes, then transfer to cold water. Drain and blend into a smooth puree.

  2. Prepare tofu Pat tofu dry and pan-fry or bake until golden. Set aside.

  3. Make masala base Heat oil in a pan, add cumin seeds. Sauté chopped onions, garlic, ginger, and green chili until golden.

  4. Add tomatoes & spices Mix in tomatoes, turmeric, salt, and garam masala. Cook until tomatoes soften.

  5. Combine Stir in the spinach puree and simmer for 5–7 minutes. Add the cooked tofu and simmer for another 2–3 minutes.

  6. Finish Add lemon juice or a splash of plant-based cream for richness. Garnish with a few tofu cubes or fresh coriander.
